Cucumber Salsa

This wonderful, fresh and chunky salsa can be served with everything from chips to any fish or chicken meal you can create.  Enjoy a healthy snack with a Saturday afternoon beer, or delicious homemade meal any night of the week.  Of course, it’s wonderful on tacos and burritos.  Use fresh ingredients from your garden for one of the most refreshing and healthy salsas you’ve ever tasted.

Prep Time: approx. 15 Minutes. Ready in: 25 Minutes

Ingredients:

  • 2 medium cucumbers
  • 2 medium tomatoes, or the equivalent of cherry tomatoes
  • ½ cup chopped green, yellow or red pepper
  • 1 jalapeno, habanero, serrano or spicy pepper of your choosing
  • 4 bunching onions or one small onion
  • 2 tablespoons lime juice
  • 2 teaspoons minced, fresh cilantro
  • Salt and pepper to taste
  • Add parsley, dill, garlic or mango for your taste buds

Remove the skin from your cucumbers if you’d like, and cut them in half lengthwise.  Use a spoon to remove the seeds, and then chop up your cucumbers into salsa sized bits.

Remove the seeds from your sweet peppers and chop them up into salsa sized bits as well.

Chop up your hot pepper (remove the seeds first if you want to reduce the heat).

Chop up your tomatoes, onions, cilantro and other herbs.

Mix your veggies in a bowl with 2 tablespoons of lime juice.

Chill in the refrigerator for 10 minutes or until cool, serve and enjoy 😊
