Swiss chard frittata

Frittatas are easy to make and very versatile. They can be served for breakfast, lunch, or dinner and are a great way to include vegetables in your meal. Use the Swiss chard (or spinach) and green onions from your iHarvest® or uHarvest® in this recipe.

Prep Time: approx. 10 Minutes. Cook Time: approx. 20 Minutes. Ready in: approx. 30 Minutes. Makes: 6 servings. 

  • 2 tablespoons olive oil
  • 6 small red potatoes, peeled and cubed
  • 1 cup Swiss chard leaves (or spinach)
  • 2 tablespoons sliced green onions
  • 1 clove garlic, peeled and crushed
  • salt and pepper to taste
  • 6 eggs
  • 1/3 cup milk
  • 1/2 cup shredded Cheddar cheese

Preheat the broiler.   

Heat the olive oil in a medium oven-proof skillet over medium heat. Add the potatoes to the skillet and stir to coat in the oil. Cover the skillet and cook about 10 minutes, or until the potatoes are tender but firm. Mix in the Swiss chard, green onions, and garlic. Season with salt and pepper. Continue cooking for 1 to 2 minutes, stirring occasionally, until the Swiss chard is wilted.

In a bowl, whisk together the eggs and milk. Evenly pour the egg mixture over the vegetables in the skillet. Sprinkle with the Cheddar cheese. 

Place the skillet in the oven and cook 6-inches away from the heat source for 5 minutes or until the eggs are set, and the cheese is melted. Remove from the oven and cut into wedges. Serve hot.
