Roasted Delicata Squash

Delicata squash is perfect for roasting because it has a thinner skin than some other winter squash. It works well with both savory and sweet flavors, such as the maple syrup in this recipe. You can use delicata squash or other small winter squash from your iHarvest® in this recipe.


Prep Time: approx. 10 Minutes. Cook Time: approx. 35-40 Minutes. Ready in: approx. 45 Minutes. 

Makes 4 servings. 
     
2 delicata squash
1 tablespoon butter
1 pinch salt
1/4 cup maple syrup
2 tablespoons apple cider or apple juice
1/4 teaspoons ground cinnamon

Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.

Cut the squash in half lengthwise. Scoop out the seeds and stringy flesh. Cut the squash halves into ½-inch thick slices. Place the squash in a single layer on the baking sheet.

Combine the butter, salt, maple syrup, apple cider, and cinnamon in a small saucepan over low heat. Cook, stirring, until the butter melts.

Brush the squash with the some of the butter mixture. Place the baking sheet in the oven and bake for 20 minutes. Turn the squash over and baste with the remaining butter mixture. Return the squash to the oven and bake for 15-20 more minutes or until the squash is tender and lightly browned.
