Italian Grinder Recipe

The Grinder is the New England version of a hoagie, hero, or sub sandwich. It can be served cold or warm and, in addition to fresh vegetables, can contain deli meat, cheese, or even meatballs or grilled chicken. This sandwich is a great way to use cucumbers, lettuce, and tomatoes, and perhaps some hot peppers from your iHarvest® or uHarvest®.

Prep Time: approx. 10 Minutes. Ready in: approx. 10 Minutes. 
Makes 4 servings. 

  • 2 tablespoons olive oil
  • 1 clove garlic, peeled and crushed
  • salt and pepper, to taste
  • 1 loaf French bread, split lengthwise
  • lettuce or arugula leaves
  • 4 ounces thin-sliced provolone cheese
  • 1 tomato, thinly sliced
  • ½ cucumber, thinly sliced
  • 1/4 red onion, thinly sliced
  • thin-sliced deli ham or turkey

In a small bowl, combine the olive oil, garlic, salt, and pepper. 

Place the French bread loaf on a work surface. Lightly brush the cut sides of the bread with the oil mixture. Place a layer of lettuce on the bottom half of the bread. Top with the cheese followed by the ham, turkey, tomatoes, cucumber, and onion. 

Drizzle any remaining oil over the onions. Top with another layer of lettuce, followed by the top of the bread. Cut the sandwich into fourths and serve immediately.
