Cucumber Mint Water
Cucumbers are rich in antioxidants, vitamins, and have anti-inflammatory properties. Mix them with mint and water and you have a delicious, hydrating beverage. This refreshing drink is a great way to use cucumbers and mint from your iHarvest®.
Prep Time: approx. 10 Minutes. Ready in: approx. 1 Hour.
Makes 6 (6-ounce) servings.
1 cucumber, thinly sliced
1 handful mint leaves
1 liter sparkling water (or plain water), chilled
Place the cucumber slices and mint in a 2-liter pitcher with a tight-fitting cover. Add the sparkling water and mix gently. Cover the pitcher and place it in the refrigerator until chilled (about an hour). Strain the water into a clean pitcher and discard the cucumber and mint. Serve over ice in individual glasses. If desired, garnish with fresh cucumber slices and mint.
Hints: If using plain water you can store this in the refrigerator longer (sparkling water will lose its fizz).
Have leftovers of the drink? Freeze it in ice cube trays and add to plain water for a splash of flavor.
