Greek Chicken and Potatoes

Meaty chicken pieces and potatoes are coated with lemon, garlic, and oregano and baked until tender. Use fresh oregano from your IHARVEST in this recipe.

Prep Time: approx. 10 Minutes. Cook Time: approx. 1 Hour. Ready in: approx. 1 Hour 10 Minutes. 

Makes 4-6 servings. 
     
6 pieces skin-on chicken thighs and/or drumsticks
1 pound potatoes, peeled and quartered
1/2 cup olive oil
4 lemons, juiced
2 tbsp minced fresh oregano leaves, plus more for garnish
2 cloves garlic, peeled and crushed
1 1/2 teaspoons kosher salt
1 teaspoon black pepper
1 lemon, cut in wedges

Preheat the oven to 350 degrees F.

Place the chicken, skin side up, in a single layer in a roasting pan or large baking dish. Place the potatoes around the chicken.

Combine the olive oil, lemon juice, oregano, and garlic in a bowl and whisk to combine. Drizzle the mixture evenly over the potatoes and chicken. Season with the salt and pepper.

Place the pan in the oven and bake at 350 degrees F for 1 hour or until the chicken is cooked through (it should register 165 degrees F on a meat thermometer). Sprinkle with additional fresh oregano, garnish with lemon wedges, and serve hot.
